Blurb: Irish Soda Bread is at the center of every St. Patrick’s Day party with my family. This recipe is from my paternal grandmother, Eileen (Flahaven) Donnelly, whose parents, John and Ellen (Hennessy) Flahaven, were born in Limerick, Ireland. My grandmother, Eileen, lost both her mother and father by the young age of 15 years old and was later raised by her aunt and uncle. In addition to being an outstanding baker, Eileen was a wonderful mother who raised nine children and later spoiled 36 grandchildren with her delicious baked goods. My dad still raves about his mom’s baking to this day, even though she has been gone for almost 30 years. Every time my family and I make this Irish Soda bread, my grandma Eileen is brought right back into the kitchen with us, reminding us of how special our Irish heritage is.MD

Ingredients:

  • 2 tablespoons of butter, 2 tablespoons of margarine
  • 2/3 cup of sugar
  • 2 eggs
  • 2 tablespoons of caraway seeds
  • 3 cups of flour
  • 1 tablespoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 1 ¼ cups of buttermilk
  • 2 small packs of raisins

Instructions:

  1. Cream butter & margarine.
  2. Add eggs -beat well.
  3. Add sugar – beat.
  4. In another bowl: Mix flour, baking powder, baking soda, salt.
  5. Combine dry ingredients to butter mixture adding half buttermilk – stir.
  6. Then more flour mixture and buttermilk – stir until all is combined.
  7. Lastly, stir in the raisins and caraway seeds.
  8. Bake in a greased and floured loaf pan 350 degrees for 1 hour +/-.
